Amanda Scott, a native of Brenham, Texas, is a graduate of Texas A&M University and holds both a Bachelor and Master of Science in Nutrition. In addition, she also completed the Texas A&M University Dietetic Internship and is accredited as a Registered Dietitian by the Commission on Dietetic Registration.

Prior to joining the Texas AgriLife Extension Service, Amanda was employed in the field of clinical nutrition and provided clinical and food service consultation to long-term care facilities. Additionally, she worked in a university contracts and grants office where she prepared proposals and budgets for various types of federal grants.

Amanda joined the Texas AgriLife Extension Service in 2003 and was named Coordinator of the Expanded Nutrition Program (ENP) in July 2004. She is responsible for administrative support and programmatic oversight of the program, which provides nutrition education to limited-resource families with children and youth. Amanda also develops research-based nutrition education materials appropriate for limited-resource audiences and provides subject matter training to ENP agents and staff.
